One of the most creative ways to get your family to eat vegetables is to roast them. My favorite vegetables to roast include bell peppers, red peppers and baby tomatoes. I love roasting vegetables. Give this recipe a try and watch your families craving for vegetables increase. Yum!
Oven Roasted Vegetables
Ingredients:
2 large Red Bell Peppers
2 large Orange Bell Peppers
2 large Yellow Bell Peppers
2 pints Grape Tomatoes
1/2 teaspoon garden herb salt
2 tsp Olive Oil
Directions
Wash all vegetables. Preheat oven to 400. Cut peppers into 1 inch pieces. In roasting pan, toss whole grape tomatoes, peppers with herbs and oil. Roast 1 hour until tender stirring occassionally.*
*You can make this recipe your own by adding vegetables of your choice (ie potatos, onions, zuchinni, yellow squash, etc..). Be Creative! Roasting vegetables is a delicious way to enjoy food.
Garlic Chicken Breast
Ingredients
1 package chicken breasts.
1/2 teaspoon garlic salt
2 teaspoons olive oil
Directions
Add olive oil to the pan and heat. Add chicken. Add garlic to chicken and cook until golden brown. Serve with baby green salad and choice of salad dressing.
