It’s November and I’m starting to get into the holiday spirit. I love everything about the holidays. The people, the holiday aromas, the music and especially the food. I have fond childhood memories of my mother making us delicious milk recipes during the holidays including: Horchata (Rice Water), Atole (Mexican Milk Beverage), Chocolate Abuelita (Mexican Hot Chocolate) and Arroz con Leche (Rice and Milk).
I also recall a Spanish Children’s song we would sing when we made this traditional recipe:
Arroz con leche
Me quiero casar
Con una señorita
que sepa bailar.
This song brings back positive memories of my childhood. It’s so silly, but I still enjoy singing this song today.
The translation is very simple:
Rice With Milk
I want to get married
To a lady
Who knows how to dance.
As I raise a family of my own, I have incorporated many of the traditional milk recipes in my families diet to ensure that we get a balanced intake of milk. These recipes are delicious and are also a creative way to incorporate milk in your family’s daily diet. The benefits of milk include strong nails, beautiful hair and healthy skin. I’m fortunate that I have been able to make many of my mother’s homemade recipes in my home, especially, Arroz con Leche.
The smell of warm milk, rice & cinnamon has always been a way of bringing comfort into our home and makes each and every one of my family members feel very special. I say the words, “Arroz Con Leche”, and it puts a smile on my family’s face. It’s like serving a bowl of love.
Arroz Con Leche Recipe
- 3 cups whole milk
- 1 3/4 cup water
- 1 cup rice, short or medium grain
- 2 cinnamon sticks
- 1/4 teaspoon salt
- 1 14 oz can sweetened condensed milk
- 2 teaspoons vanilla
- butter for topping *optional
- 1/4 cup raisins *optional
Bring water & cinnamon sticks to a slow simmer in a large pot, over medium/low heat. Stir in milk, add in rice and barely simmer, uncovered, until rice is softened which should be about 20-30 minutes. Stir occasionally. When rice is soft, remove cinnamon sticks and stir in condensed milk, vanilla and salt. Return to a slight simmer and cook for an additional 10-15 minutes or until there is a liquid-like consistency. Serve hot, topped with additional milk and a sprinkle of cinnamon. Butter or raisins is optional.
