Wish List For On The Go Tech Savvy Families #GiftsThatDo

We are a very busy and active family with alot of gadgets.  We travel several times a year during the holidays to experience the holiday season at our favorite places.  We’re a multicultural family and celebrate several holidays including Christmas, New Year and Three Kings Day.  When our family travels during the holidays our gadgets go everywhere we go.   We prepare with all the necessities of a home office, and take gadgets that have multiple functions and use minimal accessories.  We also don’t want to take our entire home office — so we pack small, light and compact.  Can you relate?


I’m going to share my favorite gadgets for on the go Tech Savvy Families and also list some details on the items that are on my wish list:

Our reliable iPad Mini is small enough to fit in a carryon bag, but still large enough to function on the go.  My husband primarily uses it to watch movies,read books and read emails.   My children use it to play with the apps while were on the road.  I love to look at family photos and google maps for historical sites during roadtrips.  It brings back memories of all our trips. Also, with WiFi in hotels its a must have gadget for a traveling family.

I  love taking photos during a road trip, editing, and publishing them as we travel.  Sony DSLR camera’s take Professional style photos with minimal effort. On our recent roadtrip from Miami to Walt Disney World, I was abe to upload daily photos of our trip to share with family.

Whether we’re traveling by plane or on a roadtrip, I feel secure knowing that we have technology at our finger tips when we travel.  On our 10 day trip through Southwest National Parks and historic sites during the summer our gadgets were very instrumental in helping us plan visits to historical sites such as Socorro, New Mexico to visit the San Miguel Mission, established in 1626.

Our family also picks up some small items gifts for Three Kings Day Celebration to celebrate the holiday and special family members in our life:

Our famly  loves the Retro POP Handset.  We walk around the house chatting on our mobile phone sand it is just like using our house phone.   This phone is a lot of fun for the children and also for the entire family.  I’ll get them in various colors for Tres Reyes gift giving.

One of my favorite movies of the year is Brave.  I love buying movies for the family and watching them throughout the year in the house or during a roadtrip.  Our pick for Tres Reyes celebration is Brave, but seriously there are so many more wonderful movies to choose from.   A movie is a must have item for Three Kings Day celebration.

I always pick up a couple of gift cards under $25 and hand them out to family during Tres Reyes day to purchase a phone battery, office equipment, mouse or other home office accessories. It’s a wonderful way to kick off the New Year with the people we love.

By now your probably wondering, how I organize it all?  I pack all my tech gadgets in this handy purse that doubles as a camera bag — seriously, it’s a versatile tech accessory bag. I make it my own by adding my personilize pens and journals.  This bag functions as both a purse and bag, but best of all it makes me a very Tech Savvy Mom.

Beef Soup with Chayote | Caldo de Res con Chayote

During the winter months I make lots of soup to keep my family warm.   It’s always been a tradition in our home to welcome guests and family members with a warm bowl of soup.  The smell of the vegetables cooking and traditional mexican comfort food bring backs memories of dishes my mother cooks for us.
I went grocery shopping at a local Mexican market and purchased ingredients to make a traditional Mexican beef soup.  While at the supermarket, I had a conversation with the butcher on the best beef cut  for  soup.  He recommended top sirloin, a chuck roast and beef shank.  I settled on the Beef Shanks because it  is tender, lean and boneless and asked the butcher to cut the meat into chunks.  I was on a good start to making the perfect traditional mexican beef soup.
As I walked through the produce section I found fresh cilantro, carrots, bright orange carrots, cabbage, green beans and a medium Chayote.  Chayote is a pear like fruit, originally native to Mexico and traditionally served hot. When served cold it is normally added to salad in small thin slices.  Chayote has a squash-like taste and consistency and comes from the gourd family, such as cucumbers, melons, and squash.  It also adds great flavor to soup.
After completing my trip to the market and making the Caldo de Res, I realized I  need visit our local Mexican food market more often.  Looking forward to my next adventure!


Beef Soup with Chayote | Caldo de Res con Chayote

Beef Soup with Chayote Recipe | Receta de Caldo de Res Con Chayote
2 lbs. beef shank
1 lg. tomato
1 clove garlic
1 sprig fresh or dry cilantro
1 green onion
1 tsp. salt
1 tsp. pepper
1 chayote, cut into round chunks
6 green beans
1 white corn, cut into 4 chunks
1/2 lb. carrots, peeled and cut in chunks
2 med. white potatoes, cut in chunks
1/2 green cabbage, cut in 1/4 chunks


1. Cut the meat into 2 inch chunks and put in a large pot with 5 quarts cold water.
2. Add the tomato, garlic, salt, pepper, and onion; let stand 15 minutes.
3. Bring to boil quickly, then cover and let simmer for 1 1/2 hours or until meat is tender.
4. Add chayote, green beans, white corn, carrots, potatoes, cilantro and cabbage.
5. Cover pot and cook at medium heat for 20 minutes longer.
6. Serve Warm and with love.

So Thankful To Be A Mentor! #LatinoBigs

As a young child I surrounded myself by positive people.  People that were good listeners, good friends and above all people that had my back.   I always had mentors in my life that cared,  supported me and guided me.  Mentors that knew my strength, abilities and provided a boost of self-esteem.  I also had neighborhood comadres that would set me straight if they suspected I was making wrong decisions because they wanted me to be a successful and an independent woman.

As I became an adult I felt it was very important for me to provide the same type of support and guidance to others.  I shared life lessons to help raise tomorrow’s leaders, escorted youth to field trips and talk with youth about future goals.  I know that the reason I was able to transition into a role of a mentor is  because my parents were good role models to me and my siblings and taught us by example by serving our community.

I’m so thankful to serve as a community leader.   I have been fortunate to serve many roles as a mentor. Whether it was to provide a listening ear in time of need, guidance to a friend,  counseling, support at an appointment or volunteering at a local event during the holidays it’s been a very rewarding opportunity for me. I have always had a heart to serve youth and women in need in my community.  My calling is to mentor women.  Whether they are young women or peers I know that supporting women has it many rewards because I know I’m making a difference in someone’s life.  It is one of the most rewarding things I have done in my life.

Tomorrow’s leaders need mentors from all walks of life. That is why I’m so thankful for programs such as Big Brother’s Big Sister’s Latino Bigs.   Big Brothers Big Sisters Latino Bigs volunteers have multiple backgrounds. Some are bus drivers, waitresses, business owners, stay-at-home moms, lawyers, nurses and construction workers. They are also college students and retirees.  You don’t need special training or a degree to positively influence a child. YOU have what it takes to be a great role model.

Getting together doesn’t require a special occasion or expensive activity—just a few hours every month doing things the Little and Big already enjoy such as reading books, cooking together or providing guidance and inspiration.

As you count your blessing during the holiday season consider how you can help youth in your neighborhood that need a role model, guidance or just a listening ear.   Consider making a difference in the life of tomorrow’s leaders by volunteering.

American Music Awards 2012 Winners and PSY – Gangnam Style 2 Legit 2 Quit Mashup video

Like millions of viewers I watched the 40th American Music Awards.   The show was full of entertainment with some surprises among the winners.  My favorite performance were by Pitpull, Pink, Carrie Underwood and the PSY & MC Hammer – Gangnam Style / 2 Legit 2 Quit Mashup. The Gangnam Style Mashup was phenomenal!

Justin Bieber won three American Music Awards: Favorite Pop/Rock Male Artist, Album and Artist of the Year.  Justin’s mentor, Usher also won an award for  Favorite Male Artist/ R&B Soul.

There were at least 4 hashtags I noticed online during the program.  One thing I learned with these awards is that it’s very important for television shows that are looking for Social Media Interaction to display a hashtag at the corner of the broadcast as there were way too many hashtags to follow the conversation online.

Restaurant Review: An Amazing Experience at Catal Restaurant & Uva Bar

I had an amazing experience at Catal Restaurant & Uva Bar recently! The Tapas, Paella and speciality drinks are delicious! The fine dining restaurant is tucked away in Downtown Disney District and offers balcony seating with the best view of Disneyland’s spectacular fireworks!  The restaurant was also voted one of the top three dining options in Anaheim’s Downtown Disney District.

We started our evening off with refreshments, wine, cheese and tapas. I enjoyed the cheese spread and the Manchego cheese air bread.  My favorite dish was the Paella.  It was actually my first time tasting Paella.  The Paella included shrimp, saffron bomba rice, snap peas, smoked paprika aïoli and was served a HUGE Paella serving Pan.

During the middle of the event we also enjoyed the Disneyland Fireworks followed by additional tapas and an extra serving of Paella. The fireworks were spectacular! We felt like we were inside Disneyland.  We had an amazing experience.

You definitely want to add this restaurant to your list of places to take your date, close friends or family members for a relaxed dining experience.  I also recommend that you make a reservation for a special occasion or for large groups.  I can’t wait to go back!

Flan Recipe

With the Holiday’s upon us we need to start stocking up on delicious recipes and places to visit that make us feel happy and positive. The Maestro del Vaso Medio Lleno recently launched a new web series that focuses on incorporating positivity into your daily life. The “El Vaso Medio Lleno” Webshow includes ten webisodes that will air from November 5th through January 6th.

The first webisode “El Mejor Flan del Mundo” was filmed at popular Los Angeles bakery, Porto’s Bakery & Café, and includes an interview with one of the owner’s daughters Beatriz Portos. Beatriz share her family’s recipe for one of their most popular deserts – flan!
