Last Minute Christmas Shopping Ideas and Best Buy #GiftsThatDo Twitter Party

After Christmas, the Holidays are not over yet! I have many fond memories as a child celebrating Three Kings Day with traditional church service and the story of the Three Kings following the star to Bethlehem and presented their gifts of gold, frankincense and myrrh to the baby Jesus.   My mother would always wrap a small gift and place it under the tree to surprise us on January 6th.

As an adult, this holiday has a sentimental meaning to me because it reminds me about my childhood in Mexico and the traditions that we pass on from generation to generation.

It’s officially the holiday season is here and with that comes holiday entertaining and festive parties! I met with celebrity stylist, Robert Verdi and author and home entertaining guru, Katie Lee to help us get holiday ready!

Robert suggests that every woman develop at least one day-to-night look to get her through the holiday season:

Fried Catfish & Fried Walleye Recipe

One of my families favorite recipes during the holidays is fried fish!  We’re a multicultural family and we like to mix up our tamales, pozole and champurado with a little bit of southern fried cooking during the holidays.  I’ve been watching my husband make fried fish for years and have mastered the recipe.   I knew the first time he cooked Southern food we would make a great couple because our cooking styles complemented each other.


I recently discovered that the vegetable oil my family uses for cooking is soybean oil.  My family has been using the brand of oil for a long time because it healthy.  Soybean oil is one of the most versatile ingredients you can use in the kitchen – helping you create all your favorite traditional meals without compromising taste. It also better-for-you and offers other health benefits.  It is also about a tenth of the cost of some competing oils. Soybean oil contains 0g trans fats per serving and is high in omega-3s which have been proven to reduce blood pressure and can help prevent heart disease. It is also a great source of Vitamin E, a fat-soluble antioxidant which prevents cell damage that can lead to  serious diseases like cancer and heart disease.

On a cozy Sunday afternoon or a least twice during the holidays you can find our family cooking our favorite southern cuisine.   We enjoy making fried fish and over the years have incorporated catfish, fried willeye and fried salmon into our recipe.  Whether we make it day or night, its a treat the whole family enjoys.

Fried Willeye Fish  & Fried Catfish Recipe

This fried fish recipe is delicious! Your friends are going to visit your home often after making this recipe!

  • 6 catfish fillets cut into 2 pieces or nuggets
  • 6 walleye fillets cut into 2 pieces or nuggets
  • 2 eggs
  • 1 tsp pepper
  • 1 tsp. salt
  • 1 tsp baking powder
  • 2 tsp cornstarch
  • 1 cups all-purpose flour
  • 2 cups yellow corn meal
  • 1 quart soybean oil

In a bowl add the eggs,  pepper, salt, baking powder and thoroughly mix.  Dissolve cornstarch in a small amount of cold water and add it to the solution. Again, blend all of the ingredients together then add a handful of nuggets at a time to the batter and coat them well.In a separate bowl, with a lid,  mix all-purpose flour and yellow corn meal together. Add the fish nuggets, close the lid, and shake shake shake until they are well coated on all sides.

Heat soybean oil to 365°F. and fry the fish for about 7 minutes or until they float to the top.  Fry a couple nuggets at a time. I like my fish golden brown so I add another 2-3 minutes.

My 2013 Nissan Pathfinder Experience

I was recently invited to attend the Los Angeles Internationa Auto Show – Nissan NEXT Event to preview the 2013 Nissan Pathfinder.   The all new Pathfinder is a mid-sized SUV and features a redesigned chassis, dual moonroof, a slightly larger model, increased fuel efficiency and is also equipped with a lot of technology features for the entire family.

As a mom one of the first things I look at in a car is safety.  The Nissan 2013 is equipped with several safetly features including built in GPS to immediately detect your location, antilock disc brakes and six front-seat & full-length airbags.  The  2013 Pathfinder also has a hands free built in phone system, a 360-degree AroundView Monitor camera system, a backup camera and parking sensors.  There are also child safety rear door locks for the passenger doors.

The second thing I look at is the appearance and features. Is it easy on the eyes?  Does it have an iPhone connection?  Can I listen to my favorite music? Will my family be entertained? These are the type of questions I have when checking a car.  The Nissan 2013 Pathfinder is a classy and sexy mid sized crossover SUV.  When I stepped into the vehicle is feels like a luxury car.   Immediately upon entering the car I had to check to ensure there is a USB connection for my iPhone.  I found it and was very pleased because it also had a roomy center-console to store my purse, CDs, DVDs and personal items.


If you are an adventurous family like mine, the vehicle also features 2WD, 4WD or Auto mode options and 5,000 pound towing capacity to tow your boat, trailer or camper on a hitch.  The beauty of this car is that it seats 7 people comfortably for a large family such as mine.  The seats in the rear also fold down for added cargo room.


The interior of the 2013 Nissan Pathfinder includes seats for 7 members of the family.  There is a lot of legroom for all the passengers and a roomy in the cargo area to carry groceries or sporting equipment.

The 2013 Nissan Pathfinder we previewed includes a Tri-Zone Entertainment System which is controlled with a touch screen display on the dash and Onstar FMV (For My Vehicle) feature for navigation services. The driver and front seat passenger can enjoy satellite radio while the remaining passengers watch movies on dual 7-inch DVD monitors.  One of the best features of the entertainment system are the wireless headsets and rear auxiliary audio and video input jacks for family members that want to plug in their video games or electronic equipment.

Every year I start off the holidays by making goals for the New Year.  I make a  list of nonprofits I want to support and volunteer with inorder to give back to the community.   Volunteering at the local nonprofits has always made a difference in my families life.  Many would consider  volunteering a burden, but in reality, for our family volunteering is a rewarding experience.  Do you agree?


I often think about the many people that have touch my life through their volunteer efforts and it has encouraged me to give back!  Big Brothers Big Sisters Latino Bigs mentoring program is similar to the programs I was a part of as a youth.   There is currently a need for Latino Bigs because they share a common culture with Latino Littles who are in need of a little attention from a caring mentor.


I identify with the kids and the program because similar to the youth I lived in a high risk area for youths and thankfully to the role model and mentors I had in my life I was able to avoid most of the risks.

Whether you’re a school teacher, working full-time, part-time or a student, Latino Bigs needs you to become a Big Campeones!  You don’t need special training or a degree to positively influence a child.  Everyone has the ability to make a big impact in a child’s life.

Are you concerned with the end of the world or do you have any similar family members in your home?   Are you prepared?   Nat Geo will be debuting “Preparando Para El Fin Del Mundo” a program that follows the life of preppers as they proactively prepare for natural disasters, earthquakes and more.

During 1998-2000 there were several reports of  about the world coming to a complete halt because of the Year 2000 or “Y2K”.  Some members of my family prepared for the evemt proactively for several years by stashing water, food and discussing an emergency meeting spot for our family in the event of an outage.  With the Mayan Apocalyptic date of December 21, 2012 approaching a group of people known as “preppers,” are preparing for the end of the world.
