French Bread w/ Goat Cheese and Oven Roasted Tomatoes

 

I get inspired to cook gourmet food when I dine out.  I recently went to a gourmet restaurant and was inspired to recreate one of their recipes, “French Bread w/ Goat Cheese and Oven Roasted Tomatoes”.  The best part of recreating this recipe is the Honey Balsamic Reduction for drizzling sauce.  The Honey Balsamic drizzle makes this recipe a delicious appetizer or lunch. You can also eat it alone or share it with your friend or loved ones.  Hope this recipe will inspire you to recreate your favorite restaurant recipes.

French Bread with Goat Cheese and Oven Roasted Tomatoes

Ingredients:

For Honey Balsamic reduction
1 cup balsamic vinegar
1/4 cup honey
For French Bread with Goat Cheese and Oven Roasted Tomatoes
2 pints Sweet Baby Grape Tomatoes
1/2 teaspoon garden herb salt
2 tsp virgin Olive Oil
1 4oz goat cheese log
1 loaf French bread, sliced 1 1/2 inches thick
5 Kalamati Olives

 

Directions:

Wash tomatoes. Preheat oven to 400.  In mixing bowl, toss baby grape tomatoes with herbs and oil.  On roasting pan,  place baby grape tomatoes. Roast 30 minutes until tomatoes are tender stirring occasionally.

Meanwhile, combine vinegar and honey in a small pan over medium-high heat and bring up to a bubble. Reduce heat to medium and cook vinegar and sugar until they’ve reduced by about half and are thick and syrupy liquid, about 10 minutes.

Place slices of bread in roasting pan and broil for 5-10 minutes until bread is toasted and light brown around the edges. Cut french bread in half lengthwise. Slice each half into 3 pieces and place close together on baking sheet. Broil 6 inches from heat 3 to 7 minutes, or until lightly browned.

Spread goat cheese on roasted french bread and pour roasted tomatoes over bread slices.   Add Kalamati Olives over bread. Add honey Balsamic Drizzle over bread.

Garlic Chicken and Oven Roasted Vegetables recipe

One of the most creative ways to get your family to eat vegetables is to roast them in the oven with all their favorite spices and sauces. My personal favorite vegetables to roast include bell peppers, red peppers, and baby tomatoes. I just love roasting vegetables. And my oven also performs a very good job in that.

I must admit how an oven makes our life so easy. You don’t have to turn on the flame. Just toss your favorite ingredients in a bowl and put them in the oven. It just does the job. Also, getting it repaired has become so convenient that you no more need to hesitate to use it to its full capacity.

Whenever it breaks down or shows a problem, you just give to give a call to an experienced professional offering oven repair and he would come to your home to bring it back to life.

When there is so much convenience, why not experiment with some of the best dishes, that can also keep you healthy? Give this recipe a try and watch your family’s craving for vegetable increase. Yum!

Oven Roasted Vegetables

Ingredients:

2 large Red Bell Peppers
2 large Orange Bell Peppers
2 large Yellow Bell Peppers
2 pints Grape Tomatoes
1/2 teaspoon garden herb salt
2 tsp Olive Oil

Directions

Wash all vegetables. Preheat oven to 400. Cut peppers into 1 inch pieces. In roasting pan, toss whole grape tomatoes, peppers with herbs and oil. Roast 1 hour until tender stirring occassionally.*

*You can make this recipe your own by adding vegetables of your choice (ie potatos, onions, zuchinni, yellow squash, etc..). Be Creative! Roasting vegetables is a delicious way to enjoy food.

Garlic Chicken Breast

Ingredients

1 package chicken breasts.
1/2 teaspoon garlic salt
2 teaspoons olive oil

Directions

Add olive oil to the pan and heat. Add chicken. Add garlic to chicken and cook until golden brown. Serve with baby green salad and choice of salad dressing.
